Hello readers, after my social media appearance James thought you might all be interested in my home bake experiments.
When I'm not helping Jake at Pobi I love trying out new bake ideas at home. As my friends and family know, I have quite a thing for flapjacks and trying new flavors but I gave my beloved flapjacks a rest for the weekend and turned my sights on puff pastry.
I wanted to try out an alternative to mince pies to get myself into an early festive mood – might as well alleviate the Lockdown MKII blues. I had loads of ideas, but I went with spiced apple and cranberry turnovers for two reasons really, they use delicious seasonal goods and it’s something we are not doing at Pobi yet. I have to say I am pretty pleased with how they turned out and the pastry was crisper and lighter than I had anticipated. No soggy bottoms for me! I'm not convinced I've perfected the presentation yet but maybe you could be the judge of that.
I would have liked to have taken a photo of the filling, but my family got in there too quickly. I've got a busy end to the week before my next shift at Pobi, I’m in the middle of making flapjacks to send up to my grandparents and their friends in Yorkshire to cheer them up during lockdown. Hopefully my lemon drizzle, banoffee and raspberry & white chocolate flapjacks will do the trick. Will.
