My first go at a blog - Why did we start a bakery?

Why start a bakery in the midst of a global pandemic and high street lockdown? Good question. For a while now we’ve been talking about setting something up for Jake so he can work for himself – not just because he’s difficult to work with in the mornings but also because he deserves it. We did what everyone does and put it off because we were both in stable jobs, we enjoyed and that paid the bills, that was until Covid kicked in of course. Jake was unfortunately, (or fortunately depending how you look at it) made redundant and found himself with a lot of time on his hands. The day after we both agreed to start Pobi and haven’t really looked back.

What started with brownies in Tupperware and some very dubious tester loaves developed into us finding a long-term, sustainable, source of flour from Matthews in Shipton-under-Wychwood and Jake creating good quality consistently delicious bakes. Delivering safely to doors from the start of lockdown, we grew an amazingly thoughtful and caring customer base who still keep us going today – thank you again if you are one of those people!

We’ve had all sorts over the first couple of months; messages to loved ones, birthday cakes, little pick-me-ups, traybakes for those working hard in care homes, hospital care packages, a 100th birthday party and we’ve loved every minute of it… who knew we could all be so nice!

Writing all this I have realised that I haven’t actually answered the question. Is “because we

wanted to” good enough? Lockdown has been eye-opening for most people, but it has been the wakeup call we needed to get going and we are extremely thankful for that. We are also relieved that our family and friends are all safe but we know that is not the same for everyone, so our thoughts are with all those affected by the virus.

So what next? Well, we are going to keep doing what we are doing but telling you more about it. We’ll try our best to write out to you with more offers, tips, tasters and updates, that way you can be the first to taste new recipes and let us know how we are doing. We’ll keep partnering with local businesses to make it as easy as possible to taste freshly baked Pobi goods and of course, we are still planning on getting our own spot for you all to drop in and have a coffee with us!
